- 12 ozZucchini
- 8 ozSweet Corn

Instructions
- Wash the Zucchini and Sweet Corn under running water. Shred the Zucchini and squeeze it dry in a clean towel. Cut fresh corn from the cob, thaw frozen corn, or drain canned corn. Chop the Cilantro.
- Keep the Chicken Egg refrigerated until ready to cook. Combine it with the Zucchini, Sweet Corn, All-Purpose Flour, Breadcrumbs, Cumin, Cilantro, Lime Juice, and Table Salt to make a thick batter. Do not eat or taste the raw batter.
- Heat the Canola Oil in a skillet over medium heat. Cook spoonfuls of batter in batches, flattening them into fritters and turning once, until browned and the centers reach at least 160°F (71.1°C). Transfer to a clean plate and serve hot.
